Tasting Notes: A beautifully fresh and dry sparkling rosé from the foothills of the Trentino mountains. A fresh and dry sparkling rosé with persistent white foam, beautifully cherry pink in colour. Red berry characters on the nose and palate make this soft
and approachable in character.

Producer Details: Cavit is a modern and forward-thinking co-operative group in the mountainous Trentino region of northeast Italy whose 11 cellars are responsible for a massive 60% of the region's wine production. The endless permutations offered from their members' 7,000 hectares of vineyard, combined with an intriguing palette of indigenous and international grape varieties, enable Cavit to offer a broad range which excels at every level. The scale of production, combined with ultra-modern winemaking facilities, understandably makes Cavit one of Italy's most reliable sources of well-made, competitively priced wines, in particular Pinot Grigio. However, with wines such as Arele Vino Santo, Graal Metodo Classico (awarded 'Tre Bicchieri' for the 7th time and voted Gambero Rosso's Sparkling Wine of the Year in 2010) and the outstanding Maso Cervara Teroldego, chief winemaker Anselmo Martini is producing wines which rival the best of the Trentino region.

In The Vineyard: The grapes are sourced from the hills of the Adige and Vallagarina valleys in Trentino.

In The Winery: Grapes were hand-harvested at the start of September. Chardonnay grapes were soft pressed to yield the best portion of must - after decanting for 10- 12 hours this goes into stainless steel tanks for fermentation. The red grapes are harvested early to maintain good acidity levels, and are vinified as for rosé wines. After stabilistaion and clarification the wine
undergoes a second fermentation (Charmat method).

The perfect fizz

This is perfect for any occasion. It's a fabulous substitute for that well known more expensive sparkling wine! I had it for my 50th birthday & everybody loved it. Light with just the right amount of bubbles & a gentle flavour that leaves you wanting more...

Not too fizzy like many other sparkling wines. Really fruity and light.
